Yesterday I shared with you my recipe for grilled wings. Today I want to share with you my recipe for my favorite lettuce wraps. Lettuce wraps are crunchy and can basically be filled with any protein. I like to fill them with buffalo chicken. This recipe is inspired by a local restaurant that serves this as an appetizer on their menu. I always order it for lunch when I go with my coworkers.
The chicken wraps are so good. They have all the flavors and textures of chicken wings with the added bonus of crunchy lettuce. Plus, they are not fried.
This is a great snack, appetizer, dinner, or lunch. Yum!
Buffalo Chicken Lettuce Wraps
Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients (2-4 servings)
- 1 pound boneless, skinless chicken, cut into bite-sized pieces
- 1/2 cup Frank’s Red Hot
- 6 cloves garlic, minced
- 2 tablespoons butter
- 2 stalks celery, diced
- ranch or blue cheese dressing for dipping
- 1 head iceberg lettuce
Bake the chicken at 350 degrees for 20 minutes or until cooked thoroughly.
In a small sauce pan, melt the butter over medium heat. Add the garlic and allow to cook for about 1 minute. Add the hot sauce and remove from the heat.
Coat the chicken with the hot sauce mixture. Serve with celery as garnish, lettuce, and ranch or blue cheese dressing for dipping.
